Valentine's Day Snack Board

Snack boards!! (I call this a “snack” board and not a charcuterie board or cheese board because well, there’s only one type of cheese and zero meat haha). Snack/cheese/charcuterie boards are such a fun and easy way to elevate a night in, especially a cozy Valentine’s date at home! This board is gluten free with the exception of the wheat crackers.

Thankful for 2020

I’m typing this post as we travel up the highway to visit family and Darrell just asked (not knowing what I’m typing about) “What would you think if you woke up and realized everything that had happened in 2020 was just a dream? PUMPKIN PIE!!! Holiday season = pie season. It’s as simple as that! I just couldn’t hold out until Thanksgiving and had to whip up a pie yesterday!! The ultimate holiday duo, Libby’s 100% Pure Pumpkin and Nestle Carnation Evaporated Milk, make this pie fool proof! I used Libby’s Famous Pumpkin Pie recipe, and swapped out normal pie crust for a gluten free crust from Trader Joe’s to make this favorite dessert gluten-free and food-allergy friendly for our household! And it’s just as good as the “real thing” in my opinion!!

Patriotic Fruit Tray

Darrell LOVES fruit. At his old house in Lexington, he actually had a very large piece of wall art with different types of fruit all over it, haha! While we won’t be gathering with friends or family to celebrate the holiday weekend, I thought a cute fruit tray would still be fun to put together for us two. I can’t claim this idea as my own because it’s all over different websites but I did find a way to make this easy favorite gluten free!
